Some of our favourite tried and tested minimal waste recipes. We have included some zero waste tips for each recipe but our general guidelines for all would be to firstly use what you have available in the house- swap out vegetables, grains, herbs and spices according to what you have available to use. If you have any leftovers, save them, as Tom Hunt writes in his cookbook Eating for Pleasure, People and Planet ‘keep every morsel leftover from the cooking process: half an onion, a smidgen of garlic or a leaf of spinach can be added to almost any dish even when its not in the recipe.’ Happy Cooking!
