Commonly used in Indian cuisine, where it’s referred to as hing. When cooked, its flavour and smell are often described as being similar to those of leeks or garlic. Often paired with other spices like turmeric or cumin to provide a savoury, umami flavour to lentil- or vegetable-based dishes.
Use in curries, dahl etc.
